I’ll be sharing some Peanut Butter S’mores Cookies. My son fell in love with these guys!

Essentially, they are peanut butter cookies with marshmallows and chocolate added on top. YUM!

I used mini marshmallows, but you could also use one large marshmallow. You could cut the marshmallow in half and then drizzle the cookie with melted chocolate. You definitely need to place the marshmallow on the cookie as soon as they come out of the oven.

Peanut Butter S'mores ~ Virtual Christmas Cookie Exchange

Serves: 30 cookies
 
Ingredients
  • 1 egg
  • 1 cup of peanut butter
  • 1 cup of sugar
  • 60 mini marshmallows or 15 large marshmallows
  • Melted chocolate
Instructions
  1. Preheat the oven to 350 degrees.
  2. With an electric mixer, combine the egg, peanut butter and sugar.
  3. Shape the dough into small balls and place about one inch apart on a cookie sheet.
  4. Bake for 10 minutes.
  5. Remove the cookies from the oven and place either 2 mini marshmallows or ½ of a large marshmallow on top of each cookie.
  6. Drizzle melted chocolate over the marshmallows and cookies.

    Leslie, peanut butter and smore! Yes please! Definitely adding your recipe to our annual Christmas BakeOff recipe list. My girls and I along with my mother and sister have a whole day (usually the Saturday before Christmas) where we bake, bake, bake all kinds of treats to give as gifts to friends and neighbors…and enjoy ourselves.

    This is such a clever variation on a simple peanut butter cookie recipe. I love that the main cookie only needs three ingredients. (I can remember making these cookies when I was a young girl.) I am sure to make these the next time I have my girl friends over for wine night. I know that they will love them!
